I couldn't resist...I already had the oven hot from baking potatoes, and so had to indulge my desire for pumpkin pie. I made two regular ones and with the leftover filling, made a small one with no crust. I ate the small one hot and steamy. Mmmmm! Naturally, like any momma bird, I had four little birds with mouths wide open for samples. (Okay, so maybe they weren't so little...)
Before you start getting all impressed, I didn't make the crust myself, and the filling was made from canned pumpkin. Nevertheless, the children and I enjoyed it immensely! Next up on the pumpkin agenda...pumpkin bread and pumpkin cookies!
I love baking...it gives me something to share with friends and family and helps me cope with life's stresses, big or small.
